Noodle, vegetable and chicken stir-fry

Ingredients

  • 200g packet dried egg noodles
  • 1 large (180g) carrot
  • 1 medium (150g) red capsicum
  • ¼ cup (60ml) vegetable oil
  • 400g chicken thigh fillets, sliced
  • 2 teaspoons finely grated fresh ginger
  • 250g button mushrooms, sliced thickly
  • ¼ cup (60ml) chicken stock
  • ¼ cup (60ml) oyster sauce
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • ¼ medium (150g) Chinese cabbage
  • 4 green onions (green shallots), sliced thinly
  • 1 teaspoon dried chilli flakes
  • NOTE: This recipe is best made close to serving.

Noodle, vegetable and chicken stir-fry

  • Serving size: Serves 6
  • Cooking time: Less than 30 minutes
Method

Cook the egg noodles following packet instructions; drain the noodles and rinse under cold water.

Cut carrot and capsicum into thin strips.

Heat a little of the vegetable oil in a wok or large frying pan; stir-fry the chicken in batches until just cooked through and browned lightly, adding more of the oil as necessary. Remove from the wok.

Reheat wok; add a little more oil, ginger, carrot and capsicum; stir-fry until just tender. Add mushrooms; stir-fry until tender.

Return the chicken to the wok with the combined stock, sauces and sesame oil; stir-fry until hot. Add the cabbage, noodles, green onions and chilli flakes; stir-fry until combined. Serve immediately.

Not suitable to freeze. Not suitable to microwave.

Cook's note

Instead of the chicken, use sliced beef, pork mince, chopped tofu or prawns.
