Ingredients

  • ½ cup bittersweet dark chocolate (70% cocoa or higher)
  • 3 Tbsp cream
  • 1 tsp butter, for greasing ramekins
  • ½ cup Valencia orange marmalade
  • 2 eggs, separated
  • 1 egg white
  • 3 Tbsp caster sugar

Method

Heat chocolate and cream in the top of a double boiler (or in a bowl over a pan of simmering water) until chocolate has melted and mixture is smooth. Cool. While the chocolate is cooling, grease 4 soufflé ramekins with the butter and spoon 1 Tbsp marmalade into the bottom of each.

Once chocolate is cool, stir in egg yolks.

Whisk the 3 egg whites and sugar together until stiff, then gently fold into chocolate mixture. Pour into ramekins and bake in preheated oven for 12-15 minutes. Serve immediately with cream or ice cream and the remaining marmalade.
