Swiss chard & feta omelette

Ingredients

  • Olive oil
  • 1 cup roughly chopped Swiss chard, or silverbeet
  • 2 Tbsp finely sliced red onion
  • 4 eggs, lightly beaten
  • 2 Tbsp cream or milk
  • ¼ cup feta, crumbled
  • Chopped flat-leaf parsley, to serve

  • Cooking time: Less than 15 minutes
Method

Preheat oven grill. Heat a little olive oil in a small frying pan and sauté Swiss chard or silverbeet and red onion until wilted.

Whisk together eggs, cream and a little salt and pepper and pour over greens. Top with feta and cook for 2-3 minutes on a medium heat. Place under grill until golden. Sprinkle with parsley, then serve.
