  • 1½ cups honey
    1½ cups oil
    2 tsp vanilla
    1 cup rice flour
    1 cup white spelt flour (available from healthfood stores)
    ½ cup ground almonds
    1 cup shredded coconut
    ½ cup sesame seeds
    3½ cups rolled oats
    2 tsp ground ginger
    1 tsp salt
    2 cups black Doris plums, canned or fresh

  • Cooking time: Less than 60 minutes

Preheat the oven to 170ºC. Gently melt together the honey, oil and vanilla until hot, but not boiling.

Mix the dry ingredients together, add the honey liquid and mix well. Press half the mixture into a 36cm x 27cm tin. Smooth the top, cover with plums and put remaining mixture on top and smooth, pressing down firmly (use a spatula as the mixture is wet).

Bake for about 30 minutes until golden and firm. Remove from the oven, leave to cool, then cut into slices.
