Cheat’s microwave Christmas pudding

Ingredients

  • 250g butter, at room temperature
  • 1¼ cups brown sugar
  • 4 eggs
  • Grated rind 1 orange
  • 1 Tbsp golden syrup
  • 1 tsp treacle
  • 2¾ cups mixed fruit
  • ¾ cup mixed peel
  • ½ cup chopped almonds
  • 1 apple, peeled and chopped
  • 1½ cups fresh breadcrumbs
  • 1 cup flour, sifted
  • 1 tsp mixed spice
  • ¼ cup brandy
  • 2 regular-sized oven bags
  • Brandy sauce or whipped cream, to serve

Cheat’s microwave Christmas pudding

  • Serving size: Serves 8
  • Cooking time: More than 1 hour
Method

Cream butter and sugar. Add eggs one at a time, beating well after each addition. Beat in orange rind, syrup and treacle.

Stir in mixed fruit, peel, almonds and apple. Fold in breadcrumbs, flour and spice alternately with brandy.

Place one oven bag inside the other. Spoon pudding mixture into inner bag and tie tops loosely with kitchen string, but not too closely to the pudding or bags may burst. Place pudding in centre of microwave turntable and cook for 40 minutes on medium.

Stand pudding for 10 minutes before removing from bag. Serve with brandy sauce or whipped cream

Reheating pudding

To reheat, remove pudding from bag, place on a microwave-safe plate, sprinkle with 1½ Tbsp water or brandy, then cover with plastic wrap and cook on medium for 10 minutes.
