Tempura salmon

Ingredients

  • 6 x 5mm salmon slices
  • 1 nori sheet
  • salt and pepper
  • 1 tablespoon wasabi paste
  • 100g salmon roe
  • 100g fresh shiitake mushrooms, sliced thinly
  • 1 tablespoon soy sauce
  • Squeeze lime juice
  • ½ ripe mango, pureed
  • ½ cup coconut cream infused with a bruised lemongrass stalk
  • 6 lychees, sliced
  • 100g white radish (daikon), diced
  • Coriander sprigs, to garnish
  • 1 cup plain flour
  • 1 cup chilled soda water
  • Vegetable oil for deep frying

Tempura salmon

  • Serving size: Serves 1
  • Cooking time: Less than 60 minutes
Method

Lay salmon slices on nori sheet end to end, and season with salt and pepper.

Mix wasabi paste with salmon roe and spread over bottom third of the salmon. Evenly roll nori sheet up ensuring salmon is tight.

Roll in glad wrap and tie at both ends refrigerate for an hour to firm up.

Sauté shiitakes in a small frying pan with soy sauce and lime juice and keep warm.

Dress plate by spooning mango puree in a circle on the outside of the plate, spoon infused coconut cream in the centre of the plate.

Scatter lychees, shiitakes and white radish around mango puree and garnish with coriander sprigs.

Gently mix plain flour with chilled soda water to make tempura batter.

Unwrap salmon and dip in tempura batter; deep fry until crisp but still white - the middle should be just warm but not cooked.

Slice in half and place on coconut emulsion. Serve immediately.
