Tomato, chilli and cream pasta sauce

Ingredients

  • 60g butter
  • 1 small brown onion (80g), chopped finely
  • 1 cup (150g) drained semi-dried tomatoes, chopped coarsely
  • ½ teaspoon dried chilli flakes
  • 2 cloves garlic, crushed
  • 1 teaspoon cracked black pepper
  • 300ml cream
  • ½ cup (40g) finely grated parmesan

  • Cooking time: Less than 15 minutes
Method

Melt butter in medium frying pan; cook onion, stirring, until soft. Add tomato, chilli and garlic; cook, stirring, 3 minutes.

Add pepper and cream; simmer, uncovered, 5 minutes or until sauce reduces by half.

Add cheese; stir over low heat about 2 minutes or until cheese melts.

Makes 1 cup and just add pasta of your choice.

ditch the chilli and add half a cup chopped fresh basil before serving - yum!
Loved this Pasta recipe, it was quick easy and very, very tasty. The whole family enjoyed it, which is really saying something.
A beautiful sauce! - for a little more flavour,use fresh chillies cut lengthwise in half & take out most of the seeds (unless you like it hot!), then chop the chillies before adding!!!
This is a great tasting and quick meal.I will be making it again.
Love this recipe - such a tasty sauce. I might try the olive oil rather than the butter next time though. I added a bit of smoked chicken to it too.
Loved this pasta sauce although I'm not particularly keen on semi-dried tomatoes so would only use half a cup next time. I used olive oil instead of butter and didn't have any permesan so had it without and it was just delicious. My one year old gobbled it up too!
