Ingredients

  • 2 cups (300g) self-raising flour
  • 1 cup (250ml) skim milk
  • ¼ cup (70g) low-fat yogurt
  • ¼ cup (60ml) light olive oil
  • jam, to serve

  • Cooking time: Less than 30 minutes
Method

1. Preheat oven to 220°C (220°C fan–forced). Lightly grease and flour a baking tray. Sift flour and ¼ teaspoon salt into a medium bowl and make a well in centre. Lightly whisk milk, yogurt and oil together in a small jug. Add to flour, stirring quickly with a round-bladed knife, to form a soft dough, adding a little more milk if necessary.

2. Drop heaped tablespoons of dough onto prepared tray, 3cm apart. Bake for 12-15 minutes, until risen and golden. Serve warm with jam.

Tip: Add a little grated orange or lemon rind or mixed spice to these easy-to-make scones.

i have never been able to make scones successfully, these are so easy. iuse this recipe as a base for the different flavor i use eg feta cheese and sudried tomatoes thru to date ones. Thanks Suzanne
Absolute life saver! Kids are always causing us to run out of butter and marg (and cheese for the old favourite of cheese scones) but these are beautiful. Kids and hubby love them...
just made these scones and added Fresh n Fruity peach n passionfruit yogurt and some sultanas and half a cup xtra of flour and they are the lightest yummiest scones i have made and i make scones weekly so give them a go..easy as to make
