Any day now, many of us will be loading up the car for our much-anticipated summer holiday. Although without time constraints, not everyone wants to while away their annual break at the stove.

For those of you who would rather be lazing in the sun, the January/February issue of Taste is stuffed full of casual meals.

We teach you how to prepare your very own catch of the day with our masterclass on filleting fish.

We have new and, frankly exciting, ways with sweetcorn; great recipes for apricots, plums and blueberries; avocado recipes that deliciously take advantage of the glut now and some really zingy dishes from Julie Biuso on a tropical theme (think chicken curry with spicy peanut topping and grilled prawns with tamarind).

Sophie Gray makes a basic baking mix for you to take to the beach and offers three quickly made variations, such as sticky pecan cake, and there’s a bit of heat going on with our spicy new toppings for tortillas.

As well, in this issue of Taste, there’s a lunch special of transportable food to take you into a new working year (but best not to dwell too much on that now)!
