Easy chocolate brownies

  • 185g dark chocolate, chopped
  • 125g butter, chopped
  • 2 eggs, lightly beaten
  • 1 cup (220g) caster sugar
  • 1 teaspoon vanilla extract
  • 1 cup (150g) plain flour
  • 2/3 cup (70g) walnuts, coarsely chopped

Easy chocolate brownies

  • Serving size: Serves 8
  • Cooking time: Less than 60 minutes

Preheat oven to 180°C or 160°C fan. Grease and line base of a deep 20cm square cake pan.

Place chocolate and butter in a large heatproof bowl. Place over a pan of gently simmering water on low heat. Stir until chocolate melts and mixture is smooth. Remove from heat. Stir in egg, sugar and vanilla extract. Fold in flour and walnuts.

Spoon mixture into prepared pan. Bake for 20-25 minutes, until sides shrink slightly from pan. Cool in pan before cutting into squares.

Ive searched so long for the right brownies. All the recipes i find yield either what is more like a cake, or more like a slab of fudge. These are exactly what i wanted. A little bit chewy with the perfect intensity of chocolate and of course easy to make. Thanks.

I've made these a few times - as they say, very easy & failsafe. I pushed fresh raspberries into the mixture while it was in the cake pan just before cooking to make them extra special.
