Preheat oven to hot, 200°C. Lightly grease and line 2 oven trays with baking paper.
In a large bowl, combine turkey, sauce and parsley. Season to taste.
Layer 4 sheets filo, brushing each lightly with butter. Cut into 6 even squares.
Divide one-quarter of turkey mixture evenly between squares. Top each with a piece of brie. Gather up pastry to enclose the filling, pressing together to seal.
Arrange on trays, brushing with extra butter. Repeat with remaining ingredients.
Bake for 25-30 minutes, until pastry is crisp and golden. Serve hot.
Cook's tip
- If you still have some leftover stuffing from Christmas, chop it and add it to the bundles.
- Use this recipe to make 4 dinner-sized servings. Leave the filo sheets uncut in step 3, top with one-quarter of turkey mixture and cheese in centre of pastry. Fold over sides and roll up into a parcel, repeating with remaining ingredients.
