  • Cooking time: Less than 30 minutes
Method

Whisk together the eggs, caster sugar and a pinch of salt. Add the flour and melted butter and whisk together until smooth and shiny. Leave mixture to stand for 15 minutes. Preheat oven to 170°C.

Spoon mixture into greased madeleine moulds then drop 3 blueberries onto each one. Bake in the oven for 9 minutes or until golden brown. Remove from the moulds while still warm and allow to cool on a rack.

Dust with icing sugar and serve with Butterscotch crème brûlées.
