Plunge asparagus into a wide (not tall) saucepan of lightly salted gently boiling water and cook for 2-3 minutes, or until done to your liking (this depends on the thickness and quality of the asparagus).

Drain and refresh with a little cold water. Pat dry with paper towels and transfer to a heated dish. Season with a little salt and pepper and add a smidgen of oil for gloss, then toss gently and serve.

Alternatively, cool asparagus and leave to dry. Reheat gently in a frying pan with a smidgen of olive oil (don’t fry).
