Agria & chorizo Spanish tortilla

Joanne Pearson
  • Serving size: Serves 2
  • Cooking time: Less than 60 minutes

Preheat oven to 160°C. Heat the oil in an ovenproof omelette pan (20cm diameter) over medium heat.

Layer the potato and chorizo in the hot pan, then allow to brown slightly. I left the chorizo slices whole, but they can be chopped first if preferred.

Meanwhile, whisk the eggs and cheese together and season with salt and pepper. Pour the egg into the pan and leave on the heat for 1 minute to seal the bottom of the tortilla. Remove from the stove and bake in the preheated oven until egg has just set, about 5 minutes. Serve hot or cold, with salad greens and relish.
