Ingredients

  • 225g butter, softened
  • 275g brown sugar
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • 300g plain flour
  • 1 tsp baking powder
  • 250g chocolate, chopped into chunks
  • (use either dark, milk or white or a mix)

Method

Preheat the oven to 180ºC fanbake. Beat the butter and sugar together until light and creamy, then add the eggs and vanilla and combine. Sift together the flour, baking powder and a pinch of salt and add to the butter mixture, stirring until just combined. Add chocolate chunks and evenly distribute throughout the mixture.

Place heaped tablespoonfuls of mixture on trays lined with baking paper, making sure they are about 5cm apart as they will spread. Bake in the preheated oven for 10-14 minutes or until cookies are golden and still slightly soft in the centre.

Cool for 3-5 minutes on the trays, then transfer to a wire rack to cool completely. Store in an airtight container.
