  • The fresher the fish, the better it will taste.
  • Fresh fish should not have a pungent odour.
  • Fish should have bright eyes.
  • Talk to your fishmonger — they will be able to tell you which fish is freshest that day.
  • If you're lucky enough to live near the coast, visit your local fish market
  • Ideally, fish should be cooked the same day it is bought.
  • If it's not possible to cook it on the same day, refrigerate and cook within one to two days.
  • If you're not planning to use the fish straight away, put it straight in the freezer, wrapped tightly in a plastic bag, removing as much as air as possible.
  • Defrost it in the fridge, or by running it under cold water.
