When cooking a meal, it’s the main dish that grabs the limelight and all of the consideration. All too often, we resort to old standbys when choosing side dishes. Well, it’s time for a rethink because a good accompaniment has the power to elevate a simple piece of meat or fillet of fish.

This month Taste food writer Luca Villari moves past the predictable to offer side dishes that have definite star power. You’ll hardly be bothered with the main when you get a forkful of his Creamy Spinach with Muscatels & Toasted Pine Nuts or Creamed Parsnip with Truffle Oil. Helpfully, he gives ideas on what to serve with each one.

Here at Taste we are often asked for gluten-free recipes and in the April issue we oblige with baked goodies from Alison Robert. In our health section we have a feature on living with coeliac disease and there’s also a story about a gluten-free bakery in Christchurch. For the rest of us there’s simple baking from Annabel Langbein. And — as usual — we serve up a feast of other dishes. Julie Biuso has zesty recipes with preserved lemons and limes, there are comforting recipes for apples and delicious nibbles for drinks. Plus, food writer Sarah Bowman has three oaty breakfast dishes that will tempt even the most reluctant of young eaters.
